Crock Pot Chicken Taco Chili a la Julie
Ingredients:
- 1 medium onion, chopped
- 1 jalapeno pepper, chopped
- 1 small chili pepper, chopped
- 1 1/2 cups cooked black beans
- 1 1/2 cups cooked kidney beans
- 1 8-oz can tomato sauce
- 10 oz package frozen corn kernels
- 1 14.5-oz can diced tomatoes
- 1/2 cup of ketchup
- 1 packet taco seasoning
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz can precooked chunk chicken
- 1/4 cup chopped fresh cilantro
Cook black and kidney beans in a pressure cooker per pressure cooker directions while preparing veggies. Combine all ingredients in crock pot. (Drain beans and canned chicken) Cook on low for 10 hours or on high for 6 hours. Top with fresh cilantro. Also try it with low fat cheese and sour cream. I served it over fresh cooked brown rice.

Ingredients:

- 1 packet taco seasoning
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz (3-4) boneless skinless chicken breasts
- chili peppers, chopped (optional)
- 1/4 cup chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).
Looks great! I might substitute the canned chicken for fresh chicken though. I'll let you know how it turns out!
ReplyDeleteYes, fresh chicken is also a great idea. In Ohio we can get these great big 28-ounce cans of fresh shredded, pre-cooked chicken that is awesome and super easy to cook with. I can't find any here in Michigan like that.
