Gluten Free CORNMEAL SUGAR COOKIES | |
3/4 c. butter
1 c. packed brown sugar 1 egg 1 tsp. vanilla 1 1/4 c. rice flour 1 c. yellow cornmeal 1 1/2 tsp. baking powder 1/2 tsp. salt 1 c. chopped nuts (optional)
In
a mixing bowl, beat butter and brown sugar with an electric mixer on
medium to high speed until fluffy. Add egg and vanilla. Beat well. Stir
together rice flour, cornmeal, baking powder, and salt. Add to sugar mixture
and beat until thoroughly combined. Stir in nuts. Shape into 3 (12 inch)
rolls. Wrap and chill for several hours. Cut into 1/4 inch slices.
Place on ungreased cookie sheet. Bake at 375 degrees for 8 minutes or
until brown. Remove and cool on wire rack. Makes about 8 dozen cookies.
